Inchelium

wonderful roasting garlic, all round flavor, found by the Bear Creek
Farm/Nursery (now Green Wave Gardens) pioneer, Larry Geno, on the
Colville Reservation. Voted top-rated softneck by Rodale kitchens. Milder
to moderate heat and full of flavor. One of our favorites drizzled with
olive oil and baked. Our biggest garlic, some over 3 inches in diameter,
8-20 large cloves. Stores 6-8
months.

Lorz Italian

A Northwest Heirloom brought to our Columbia Basin by the Lorz family in the 1800’s(from Italy). Our farm produces large, flattened shaped colorful bulbs. Usually follows Inchelium in size. Tends to be hotter than other artichoke varieties. Strong, earthy flavor, can be very hot in warmer climates, 12-20 large cloves, with larger inner cloves. Good variety for warm climates. Stores 6-7 months.

An excellent mild artichoke from France. Usually mild, but weather extremes can render it hot and strong. Fairly early maturing and nice size. Easy to grow. Stores 6-7 months.

Chopaka Mountain
1 Pound Limit
Possibly a spin-off of Inchelium, grown for a decade in a remote mountainous valley of central Washington. Many of the same characteristics of Inchelium. A usually mild, lingering flavor, a superb artichoke variety. Good keeper, 7-8 months.
